Lamb makes a nice change from Turkey

Try this easy lamb leg recipe for a change. It's so simple and a great sunday roast recipe for all year round.
. Cut an onion, carrot, celery stick and leek in half and place in a baking tray.
. Puncture lamb leg with a small knife and insert small pieces of garlic and rosemary all over.
. Season with sea salt and dried chilli flakes and drizzle with a little oil.
. Cook at 170 degrees for 2 hours.
. Rest for half an hour covered in foil and then carve!
The best thing about this recipe is that even if you overcook the lamb a little, as long as you let it rest, it will melt in your mouth. Forget the common theory that lamb is fatty, the legs and shoulders are lean and full of flavour. I served it with Boulangere potatoes and braised red cabbage. it was delicious and easy and as everything was cooked in the oven, I didn't even have to keep an eye on it.
