Sunday brunch: Buttermilk, blueberry and buckwheat pancakes
Try them out. You can always make the mix before you go out on Saturday night so they're ready to cure your hangover on Sunday morning!
Here's the recipe for 5-6 pancakes:
Ingredients:
200g buckwheat flour
100ml buttermilk
100ml almond milk (or any normal milk)
2 tbsp maple syrup
2 eggs
1tsp baking powder
100g blueberries
pinch of salt
Preparation:
. Put all the dry ingredients into a bowl and mix
. Crack the eggs in and add the buttermilk
. Mix together and then add the almond milk
. Fold in the blueberries and ideally leave to stand overnight. If you don't have time for this, you can use the mix straight away but it's better to let it relax overnight
. Put a ladle full of the mix into a hot 6 inch non stick frying pan
. Allow to colour for 30 seconds then place in an oven at 170 degrees for 1 minute then flip over and repeat the process for each pancake.
