Gluten free Cauliflower pizza

Ingredients: Makes 1 pizza
270g cauliflower
1 egg
1 ball of mozarella
1tbsp grated parmesan
1 tbsp of chopped parsley
100g gluten free flour
Salt to taste
Ground black pepper
Method:
. Pre-heat an oven to 180 degrees
. Cut cauliflower into chunks or florets then place in a food processor and blitz until it resembles cous cous or has a breadcrumb consistency
. Place in a microwavable bowl and cook on full power for 2 minutes and then allow to steam and cool a little
. Grate the mozarella using the thick side of a grater and add the parmesan using the fine side for this.
. Add the egg, parsley gluten free flour and seasoning
. Mix the ingredients together to form a wet dough like paste/ batter
. Line a tray with baking paper and spread the mix on the paper using a spoon or spatula into a pizza base shape
. Bake the base for 15 minutes unti starting to firm up and colour
Quick tomato sauce:
1 tsp tomato paste
2 tsp ketchup
half clove of garlic pasted
2 fresh tomatoes
2 sundried or sunblushed tomatoes
salt and pepper to taste
Method:
. Blitz all ingredients together in a blender or chop them up and smash up in a bowl with a fork or potato masher.
. Season and spread on base after the 15 minute first cooking period.
. Add toppings of your choice and bake for a further 10 minutes until base is crispy and browned.
The base is never going to be as crispy as a pizza base from a woodfired oven made with flour but it is a great quick alternative, faster and easier to make gluten free and healthy. What more could you want!
