Chocolate, Cauliflower and Caramel mmmmm

Cauliflower in a Brownie might seem a little strange but trust me it works. It means you can reduce the amount of heavy gluten or you can cut it out altogether! It also makes the brownie softer and more gooey than normal.









200g cauliflower florets
70 ml milk
1 tsp rice vinegar
100g self raising flour ( or 100g ground almonds for gluten free)
50g sugar
Pinch baking powder
Pinch bicarbonate soda
15g cocoa powder
Pinch sea salt
2 tbsp olive oil
1 dsp vanilla extract
4 tbsp chocolate chips or chocolate chopped
2 tbsp salted caramel sauce
50g white chocolate




. Pre heat an oven to 180 degrees

. Place the cauliflower, vinegar and milk in the food processor and blend until smooth then add the olive oil and vanilla and blend again

. In a bowl place all the dry ingredients and mix together

. Add the cauliflower puree mix to the dry ingredients and combine in the bowl

. Fold in the chocolate chips and then pour into a lined loaf tin or baking tin

. Bake for around 30 minutes then serve whilst warm

. Turn out and top with salted caramel sauce and grated white chocolate

. For a twist add zest and juice of 1 orange
