Leftover potato = Gnocchi

This recipe is a great way to use up leftover potato or old potatoes that you have hanging around your home. It's surprisingly easy to make and really tasty.
Ingredients:
1kg potato gnocchi (suggest floury ones such as King Edward)
100g plain flour
2 egg yolks
50g grated parmesan
Handful chopped parsley
1 clove of garlic pasted
Method
. Bake the potatoes in an oven at 170 degrees for 40-50 minutes or until cooked through
. Cut in half and scrape out the potato from inside, then using a fork or a potato masher mash the potato so lump free.
. Add all the other ingredients to a bowl with the mash and mix together
. Knead the dough slightly until together for around 10-30 seconds
. Cut into smaller pieces and roll into long sausage shapes as in the picture.
. Lightly dust with flour and cut into 2cm pieces
. Cook the gnocchi in simmering water with a pinch of salt and a dash of olive oil in. Once the gnocchi floats to the surface the gnocchi is ready to take out.
. This gnocchi is great just served with a drizzle of olive oil and a little grated Parmesan.
